Why do internal links help rankings?

They show search engines which pages matter and what they're about, and they pass authority from your strongest pages to the ones you want to rank. They also help visitors find related pages.

What anchor text should I use?

The words that describe the target page, usually the keyword or a natural variant, as part of a sentence. Avoid "click here", and don't use the exact same anchor on every page.

How many internal links should a page get?

Enough that it's easy to reach from related pages: a handful of contextual links from relevant articles and service pages is a good start. Quality and relevance matter more than the count.
